Ethiopia is widely recognized as the birthplace of coffee. Thousands of varietals are still growing wild in forests throughout Ethiopian coffee regions, and many farmers will still collect seeds from wild coffee trees to plant in their gardens for their yearly crop. This vast genetic diversity, along with an ideal climate for coffee growing, leads to some of the most dynamic and highest quality coffees we can source every year. This year, we secured an excellent lot from the Kochere co-op, near the town of Ch’elelek’tu. When executed well, this more traditional method of processing coffee can bring out some very exciting flavors in Yirgacheffe coffees. This selection offers a raspberry-like acidity, with flavors of vanilla, cola, and black plum preserves. In this coffee, a raspberry-like acidity gives way to flavors of black plum preserves, vanilla, and cola.
