The COOPAC cooperative grows this fine coffee in the Rutsiro region of Rwanda, around Lake Kivu. Outside of Ethiopia, this is one of the few certified Organic and Fair Trade cooperatives in all of Africa. COOPAC has grown from 110 farmers in 2001 to over 2,200 members today. They are committed to environmental and social sustainability; waste-by-products from coffee processing are used as a fertilizer, for example. This lot is sweet and floral, with a green apple acidity, flavors of fig and craisins, finishing long and smooth.
