Genetically linked to the landrace varieties of Ethiopia, this relatively rare variety offers a highly complex and nuanced flavor profile—and this release from Jhoan is no exception. Once harvested, the cherries undergo an oxidation period before being depulped and then undergoing a period of anaerobic fermentation. During this fermentation, mosto from the previous fermentation is added, which allows for the introduction of important sugars, yeasts, and bacteria that contribute a unique depth of flavor to the coffee.
