A Funky Favorite Returns: Special Reserve Costa Rica by Nazareth Robles
We’re thrilled to welcome back a truly special coffee from Costa Rican producer Nazareth Robles! This is the second year we’ve partnered with Nazareth, and she’s made some exciting changes to her fermentation process, which have resulted in a flavor profile that’s both familiar and freshly refined.
Carrying on a Family Legacy
Nazareth may be early in her own coffee career, but she’s the fourth generation in her family to work in coffee. Growing up learning from her father, Leonard Robles, and staying in tune with market trends, she brings both innovation and tradition to her work. The Robles family initially focused on washed coffees, but as Costa Rica’s coffee landscape embraced honey and natural processes, they began experimenting. Today, their family is known as pioneers in the Tarrazú region, consistently pushing boundaries and exploring the art of fermentation to create exceptional coffees.
New Techniques for a Balanced Flavor
This year, Nazareth has taken her experimental processing even further. With a goal of mellowing and balancing the coffee’s unique flavor, she refined her drying method by more frequently turning over the coffee during the drying phase. This adjustment brought cleaner, sweeter, and more harmonious notes to the cup, while still keeping the distinct, exotic characteristics we loved in last year’s lot.
Distinct in the Cup
The result? Expect to be captivated by tropical flavors like mango, papaya, and grilled pineapple, alongside rich notes of molasses, honey, and a hint of rum raisin. The cup remains exotic and complex, but this year’s profile is noticeably sweeter and more balanced, a testament to Nazareth’s careful adjustments and skillful processing.
