At the Biru Bekele wet mill in the Oromia region of the Guji district of Odo Shakiso, innovative methods are constantly being explored to enhance the quality and flavor profile of coffee. The farms contributing to this lot are situated at elevations between 1750 and 2050 meters above sea level. One such method is the yeast process, specifically using the Intenso yeast strain. This meticulous process is a testament to the dedication to producing exceptional coffee. The process begins with the careful selection of only the ripest, red cherries. This ensures that the cherries are at their peak sweetness and flavor, which is crucial for the yeast process. During the pulping process, a minimal amount of water is used to retain as much mucilage as possible. This mucilage is essential as it serves as food for the yeast. After pulping, the cherries are stored in a tank. The Intenso yeast strain is then rehydrated, maintaining a ratio of 1 kg of yeast to 160 kg of green coffee. This yeast mixture is evenly distributed into the tank to ensure it reaches all the coffee. The tank is then filled with just enough water to cover the coffee by 3 cm.
The coffee beans undergo a 72-hour fermentation period. During this time, the yeast works its magic, breaking down sugars and developing complex flavors within the beans. This controlled fermentation is crucial for enhancing the coffees’ unique characteristics. After fermentation, the coffee is gently washed using a minimal amount of water to preserve the delicate flavors developed during fermentation. It is then transferred to African beds for drying. This drying process takes about 16 days, during which the beans are carefully monitored until they reach the target moisture level. The yeast process, with its careful selection, precise fermentation, and attentive drying, results in a coffee that is rich in body, complex and layered, and full of unique and distinct flavors. By embracing innovative processing methods like the yeast process, the boundaries of coffee production are continually being pushed, delivering exceptional and memorable coffee experiences to customers.
