COCAFCAL, or Cooperativa Cafetalera Capucas Limitada, is the local coffee farming cooperative situated in the town of Capucas, near a mountain top in the Copán region of Honduras. The Capucas area is a true coffee community, with the lifestyle and economy deeply intertwined with coffee production. The cooperative plays a crucial role in supporting local farmers, promoting sustainable practices, and enhancing the quality of life for its members.
Pedro Romero resides just a short six-minute drive from COCAFCAL. The journey to his property winds through forested land, creating a picturesque scene as sunlight filters through the shade and coffee trees. Upon arrival, one is struck by the beauty of his home and farm, which are adorned with an abundance of flowers and tropical plants. During our visit, Pedro graciously guided us through his property, proudly showcasing his new anaerobic barrels for coffee fermentation, immaculate covered drying beds, and honeybee colonies.
This year, we requested a unique and distinct coffee from Pedro, and he delivered exceptionally with a 10-bag lot of Parainema natural processed coffee. This batch stands out with flavors reminiscent of fresh pastries, subtle notes of boozy fermentation, a slight orange zest, and freshly poached pear. It is distinct, strong, and delicious, offering a new and exciting experience unlike any we have received in the past.
As a producer deeply committed to environmental sustainability, Pedro prioritizes the preservation of the ecosystem and the reduction of carbon emissions. His farmland is dotted with mature shade trees, which he could sell for lumber but chooses to maintain in order to preserve the natural landscape. This dedication to sustainability not only enhances the environmental health of his land but also contributes to the overall quality and uniqueness of his coffee production.
