A vibrant take on the well-known classic, showcasing notes of caramelized sugars and chocolate sweet pastry while uplifted by juicy red fruit. 

We are excited to introduce our new Mexico Chiapas coffee, which is replacing our Mexico El Triunfo offering. Interestingly, and with some intention, this new coffee comes from the same region as our previous Mexico offering. Like Mexico El Triunfo, Mexico Chiapas also borders the protected Triunfo Biosphere, an area renowned for its rich soils, diverse wildlife, and exotic plants. This means that the flavor profile will be very similar to our previous Mexico coffee.

The main difference lies in the quality of harvesting and processing, now handled by GRAPOS. GRAPOS (Grupo de Asesores de Producción Orgánica y Sustentable, which translates to A Group of Advisors on Organic and Sustainable Production) is a group of coffee producers operating in the municipalities of Soconusco, Siltepec, Provenir, and Tapachula in the state of Chiapas.

Originally formed by 90 members, GRAPOS has grown over ten years to include more than 3,000 farmers across the region. As the group has expanded, so has the number of female producers, each of whom have inherited or own their own land. Throughout the harvest, each farmer adheres to strict protocols to ensure optimal ripeness through hand-sorting and floating to remove damaged and under-ripened cherries. These cherries are then depulped, fermented, washed, and dried on raised patios to a moisture content of 11%.

GRAPOS is well-regarded by farmers for their investments in nurseries that support farm renovation and for their diversification initiatives, which include a women's knitting program and a mushroom cultivation project, both aimed at creating additional sources of income for the farmers.

In your cup, you'll still enjoy the leading note of chocolate, but this Mexico Chiapas coffee is beautifully balanced with flavors of toffee—think candied nuts and caramel—and is structured with hints of red fruit, such as cherry and ripe pomegranate. Overall, the taste difference is subtle, ensuring that this coffee remains welcoming and approachable. Enjoy this delightful offering for the next year!
