This is our second microlot release from Jhoan Vergara's Finca Las Flores! Finca Las Flores is one of five farms in the Acevedo region of Huila, Colombia that work in a collaborative effort to continue the development of innovative processing and rare variety cultivation. This community of farms includes Las Flores, El Diviso, La Cordillera, El Triunfo, and La María.

Las Flores has a rich history beginning when Edilberto Vergara and Nubia Ayure, the parents of producer Jhoan Vergara, arrived in 1990, relocating from Cundinamarca to Acevedo, Huila. The farm began with two hectares and a mix of Caturra and Colombia coffee trees, amounting to 18,000 total trees planted. Through the help of their three sons, Carlos, Jhoan, and Diego, they have grown to twelve hectares, where they cultivate many different types of experimental varieties. While Carlos and Diego contribute to logistics, their middle son, Jhoan, focuses on working with other outstanding producers to develop new and innovative processing methods.

Among the addition of other varieties such as Java, Pacamara, Tabi, Pink Bourbon, Catimor, Geisha, and Chiroso, the Sidra is one of the more newly discovered varieties at Finca Las Flores. This year it is our great pleasure to offer a natural Sidra in conjunction with an experimental washed Geisha from Jhoan Vergara in our microlot lineup! The Sidra has long been considered the result of crossbreeding Typica and Bourbon varieties, though recent genetic testing has linked it to Ethiopian Landraces. It has become well-known in recent years for its bright and dynamic flavor profiles, and this release from Jhoan is no exception.

Once harvested, the cherries undergo a 12-hour oxidation period immediately followed by submerged fermentation in a controlled environment for 48 hours. Following this, the coffee undergoes a thermal shock process with water heated to 50 degrees Celsius to stabilize and fix the aromatic compounds. Finally, it undergoes a 24-hour drying process in a mechanical dehumidifier. This year's lot is showing up with intense tropical florals and notes of juicy guava and watermelon in the cup.
