Jhoan Vergara’s mosto washed Chiroso is one of many experimental and innovatively processed varieties produced at Finca Las Flores in the Acevedo region of Huila, Colombia. Genetically linked to the landrace varieties of Ethiopia, this relatively rare variety offers a highly complex and nuanced flavor profile—and this release from Jhoan is no exception. Once harvested, the cherries undergo an oxidation period before being depulped and then undergoing a period of anaerobic fermentation. During this fermentation, mosto from the previous fermentation is added, which allows for the introduction of important sugars, yeasts, and bacteria that contribute a unique depth of flavor to the coffee. In the cup, we're finding so many vibrant flavors, ranging from intense florality and spicy ginger to bright, sweet stone fruit and citrus acidity.
