Situated in the heart of the Andean region of Colombia, Tolima is one of the most well known coffee growing regions in the country. Due to high altitudes as well as proximity to the equator this region boasts a perfect climate for growing coffee and a year round growing season. This year were bringing an approachable Colombia offering to our shelves from the ASPRASAR (Asociación de Productores Agropecuarios de Santa Rosa) cooperative. Founded in 2016, the co-op is made up of roughly 80 coffee growing families, with farms averaging 2.5 hectares in size. Coffee cherry is picked, processed and dried at individual farms before being sent to the co-op for exporting. Co-ops in this area were created as a way to empower the farmers in this area, through exporting, education and improved quality which have historically been hard in this area due to its remote location.
