Sourced Through

Atlas Coffee Importers

Atlas Coffee Importers has sourced specialty green coffee since 1998. It was founded on the idea that a good deal for Atlas should be just as good for the producers, roasters and team members it works with. Atlas is based in Edmonds, Washington, and is now part of Neumann Kaffee Gruppe. It builds long-term partnerships at origin, some of them going back generations, with producers from El Salvador and Guatemala to Ethiopia and Kenya.

Behind the Cup

Five Generations of Pacas Coffee

This is a single-variety Pacamara microlot from Finca La Esperanza in the Apaneca-Ilamatepec Mountain Range of El Salvador. Owned and operated by the Pacas family, this 87-hectare farm is well known for its experimental processing and for producing unique varieties such as Bernardina, Pacamara, and Pacas.

To produce this lot, coffee cherries are hand-picked, carefully sorted, and dried with meticulous attention. During the first two days of drying, they are laid out in a thin layer to dry quickly, limiting the amount of fermentation. On the third day, the cherries are spread more thickly and turned frequently to promote slow, even drying. When the coffee reaches 12% moisture, it is milled and prepared for export, resulting in a cup with balanced sweetness and remarkable elegance.

It is always a joy to feature Pacas coffees in our lineup, not only for their quality but also for the family’s commitment to competitive wages, employee benefits, reforestation efforts, and farming practices that support soil health and the surrounding ecosystem.
