At Finca La Providencia in Cantón Las Cruces, Chalchuapa, Santa Ana, sibling duo María and Alfredo Pacas cultivate a multitude of varieties, including Bourbon, Pacas, Pacamara, and Geisha, including this naturally processed Geisha microlot. Coffee cherries are hand-picked, carefully sorted, and dried with meticulous attention. During the first two days of drying, they are laid out in a thin layer to dry quickly, limiting the amount of fermentation. On the third day, the cherries are spread more thickly and turned frequently to promote slow, even drying. When the coffee reaches 12% moisture, it is milled and prepared for export, resulting in a cup with balanced sweetness and remarkable elegance.
