This is a stunning washed offering from the Gogogu Washing Station of the Guji Zone, produced by over 700 smallholder producers in the Ethiopian highlands. The harvesting season goes from November to January, and during this time the cherries are carefully handpicked, floated in water to remove defective beans, and then depulped. After depulping, the cherries undergo around 36 to 72 hours of fermentation in spring water, after which they are washed and dried on raised beds for about nine to twelve days. Once this process is complete, the coffee is hulled and prepared for export. As is typical for coffees of this region, this year's lot is comprised of regional Heirloom Landraces. These varietals, paired with the distinctive terroir of the region, give this coffee its characteristically Ethiopian profile. In the cup, look for bright and delicate notes of pomelo, almond, and Darjeeling tea.
