This naturally processed coffee is our second offering from the Gogogu Washing Station in Uraga Woreda. This region is situated in the Guji Zone of Ethiopia, an area known for its distinct terroir and heirloom varietals. To produce this naturally processed lot, the coffee is typically delivered to the washing station the day it is harvested, where they are first sorted for ripeness and quality and then rinsed with clean water. Then the coffee is spread to dry on raised drying beds, where they are rotated constantly to ensure even drying. This process generally takes anywhere from 8 to 25 days, depending on the weather conditions. Once this is complete, the coffee is transported to the mill where a hulling machine is used to remove the cherry and the parchment layer. After the coffee has been milled and undergoes a final sorting, it's finally ready for export. This year's lot is showing up with a wonderfully dynamic flavor profile - a combination of the tart acidity of red currants, rose hips, and sweet and decadent peach cobbler.
