In the San Ignacio province of Cajamarca, Peru is La Prosperidad de Chirinos, a cooperative made up over 800 producer members. Founded in 1968, the people of Chirinos have worked hard to build an organization focused on producing high-quality organic coffees and the betterment of their community. The coffee here is grown with great care at high altitudes in the surrounding mountains, usually with each producer operating on approximately 4-5 hectares. The resulting coffees are diverse and complex, with sweet, nutty flavors balanced by citrus acidity.
