This lot is a blend of Timtim and Catimor varieties from Aceh Tengah, grown at about 1,700 meters above sea level in the highlands of this northwestern province of Sumatra. It is produced through the Kuala Bengi cooperative, using a wet hulling process typical of Sumatra. During this process the cherry is depulped, then fermented overnight in concrete tanks, where the sugars and pectin in the mucilage begin to break down. Once this complete, the mucilage is removed through a washing process and then sun-dried for two to three days in parchment. At this point in the drying phase, the moisture content is still at around 20%, which means that the beans are much softer still than typical washed process beans and the parchment is only semi-dry. The coffee is then milled with a wet huller that has enough power to create the friction needed to remove the damp parchment from these larger, softer beans. The unique processing and terroir of the Sumatran highlands produces a distinctive earthy cup, with notes of golden raisin and spicy clove, paired with a honey sweetness.
