In 2018, we made our first visit the La Prosperidad de Chirinos, situated in the San Ignacio province of Cajamarca. This year, we are proud to offer this microlot from co-op member Miguel Ramírez, who has been growing coffee since 1995 and has played an active role in the Chirinos cooperative for over two decades - both in coffee production and in leadership. The care and skill he puts into his farm is more than evident in the cup. This year's lot is a field blend of geisha, catuai, and catimor varietals that are gently washed, pulped, and then fermented for 16 hours before going into a solar dryer, likely imparting some of that deep sweetness that we’re tasting in this coffee. In the cup, enjoy notes of rich and tangy stone fruit, balanced with toasted almonds and brown sugary goodness.
